INGREDIENTS
- 1 pint Talenti Pacific Coast Pistachio Gelato
- 1/2 cup ube halaya (purple yam jam), homemade or store-bought
- 1/4 cup shredded coconut
- 1/4 cup shelled pistachios, roughly chopped
- 1/2 cup fresh raspberries, whole or halved
- Pinch of sea salt
INSTRUCTIONS
- Chill two serving glasses or jars in the freezer for 10–15 minutes.
- In a dry skillet over medium heat, toast the shredded coconut until lightly golden, stirring frequently. Transfer to a plate to cool.
- Using the same skillet, toast the chopped pistachios for 3–4 minutes until fragrant. Let cool.
- Layer the parfait:
- Start with a layer of roasted pistachios at the bottom of each glass.
- Add 2–3 tablespoons of ube halaya.
- Next, a scoop of pistachio gelato.
- Sprinkle with 1–2 teaspoons of toasted coconut and 1 tablespoon of toasted pistachios.
- Scatter 2–3 raspberries over the layer.
- Add a second layer of ube halaya, gelato, coconut, pistachios, and raspberries.
- Top with a pinch of sea salt and serve.
